Bananacake

Opdateret: 22. mar. 2021

It's Friday, and that means cake. It has taken me a long time, to create the perfect recipe for a sponge, moist, sweet, and delicious banana cake.

But I think I got it now - my sweet man, think it's a bit too sweet, but I think it's perfect, with the banana caramel and the brown sugar.

Please let me known what you think - is it the perfect recipe, or should I keep on working?

If you have all the ingredients in your cupboard, you can serve this delicious cake, in an hour - what's not to like :-)

Ingredients:

Banana caramel:

40 g brown sugar

40 g butter

½ dl heavy creme

3 bananas (about 300-320 g)

Cake batter:

150 g soft butter (i always use salted, but use what you got)

200 g brown sugar

4 egg

300 g all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

Instructions:

Preheat the oven to 180 degrees

Make the banana caramel, by slowly heat the butter and brown sugar in a saucepan, When all the sugar is melted, add the creme and stir it together, so it's all combined, boil on low heat for 5 minutes, till the caramel color darkens.

Add the bananas cut in small pieces, to the caramel, stir and let it simmer for 10 minutes while preparing the batter.

Whisk brown sugar and soft butter, and add 1 egg at a time. Add the banana caramel.

In a separate bowl, mix the salt, baking powder, and flour, and add it to the mixing bowl, with the banana mixture.

When the batter is combined after a few minutes, pour it into your baking tin.

Bake for 50 minutes.

Cool the cake for a while, before decorating it, and enjoy!
