Rawbites

Sometimes you just need that little sweet snack. And these are healthy, vegan, and easy, what's not to like.

I made them last night, ate a couple as a little snack, and the rest is kept in the refrigerator, for a little snack in my son's lunchbox, an easy kick for my mand, when he comes home and as a good and healthy "in-between" snack.

They are perfect to bring as a flight or travel snack, I know we don't travel at all right now, but I miss it, and last night, when I made these, I dreamt of all the places I want to visit when (or if...!) the world opens up again.

Ingredients:

100 g soft dates (I use Medjoul) if the dates you are using are very dry, let them soak in a water bath for 10 minutes.

3 tablespoons of cocoa powder

Finely grated orange zest (optional)

Rice flour to dust the bites, so they don't stick together

Instructions:

Mix cocoa powder, soft dates, and orange zest, to a smooth and combined mass.


Roll the sticky date mass between two pieces of baking paper, and sprinkle with rice flour. It's important to sprinkle rice flour on both sides of the date mass, to prevent the bites, from sticking together.

Cool the date mass, in the refrigerator for 30 minutes, so it's easier to cut.

When the mass is cool, use a very sharp knife, to cut the bite sizes you prefer, and enjoy.

Store in the refrigerator.
